Pesto orzo with green beans and pine nuts

Get your greens with something different!

A quick and easy meal with colorful orzo with pesto, pine nuts and green beans using fresh vegetable orzo from the one and only @mamairenepasta.

Ideal for those weekly family meals when you run out of ideas and you are short of time! You can enjoy it hot or cold as a salad.

What we need:

  • 1 pack Fresh vegetable orzo mama irene
  • 1tbsp pesto
  • Fresh green beans cut into small pieces
  • 1 cup pine nuts
  • 1 cip parmesan
  • 1tbsp olive oil
  • Hot water for the pasta
  • Salt and pepper (I also use natural bullion for the pasta).

How to cook:

  1. Boil the water for the pasta (Ratio of about 1 cup of orzo to 2.5-3 cups of water).
  2. Add the orzo with salt and the green beans until soft. (add salt if you want to flavor the beans).
  3. Remove from the heat when the pasta is still runny.
  4. Add the olive oil, pesto, pine nuts and parmesan and stir before serving.
  5. You can modify ingredients according to preference( eg using red pesto, less parmesan, no pinenuts, other types of pasta).
