Orzo with chicken, sun-dried tomatoes and olives

A delicious meal… all in one!
Easy, filling, delicious. Maybe it fits the perfect dinner, those with the candles, the red wine or… to a pleasant meal with friends.

  • 500 gr. orzo
  • 700 gr. chicken fillet in bites
  • 1 large onion, finely chopped
  • 15 sun-dried tomatoes, finely chopped
  • 200 gr. green olives in slices
  • 200 gr. tomato juice
  • salt and pepper
  • 1 tsp fresh or dried thyme
  • Fresh parsley finely chopped
  • 1 litre of water

How to cook:

  1. In a cast iron pan (or simple pan), sauté the chicken in olive oil until golden and remove.
  2. Add a little more olive oil and sauté the onion until it becomes glossy.
  3. Add the orzo, sauté for 1 minute and add the tomato juice, spices, sun-dried tomatoes and olives.
  4. Mix well, add 1 liter of water, stir and transfer to the oven.
  5. Bake at 180 degrees, for about 20 minutes.
  6. Finally, add chopped parsley and serve.
