Vegetable orzo with meat sauce

  • 400 gr fresh vegetable orzo Mama Irene Pasta
  • 500 gr ground beef
  • 3 leeks, in slices
  • 250 gr grated tomatoes
  • 1 medium onion, chopped
  • 2 small carrots, grated
  • 1 tsp cinnamon
  • ½ tsp sweet paprika
  • ¼ bunch of parsley, finely chopped
  • 3 tbsp. olive oil
  • salt (for children over one year)
  • pepper

How to cook:

  1. Heat a large pot or saucepan over medium heat.
  2. Add the olive oil and the onions and fry lightly for 3-4 minutes.
  3. Put the minced meat in the pot and sauté it, stirring lightly until it changes color, for about 5 minutes.
  4. The minced meat will drain liquids and we will let it absorb them in case we cook in a pressure cooker, if we prepare it in a pot we skip this step.
  5. Once the minced meat has no other liquids, add the spices and sauté for another 2 minutes before adding all the other ingredients and mix well.
  6. If we are cooking in a pot, let it boil on a medium heat, stirring and checking often until it is left with a little liquid, for about 30-40 minutes.
  7. If we cook in a pressure cooker, turn up the heat and as soon as it boils, close the lid and wait for the valve to rise. Then lower the heat a lot and cook for 15 minutes. At the end, remove from the heat and let the pressure cooker unlock. Check the liquids and if necessary, boil for a few more minutes with the lid open.
  8. Boil the vegetable orzo Mama Irene Pasta in a saucepan according to the instructions. Alternatively we can add it to the same pot with the minced meat, add water and boil them directly there.
  9. Serve and enjoy our food hot with a little grated cheese if desired.
