Mama Irene strigolore with crispy chicken & big mac-style sauce

Mama Irene Strigolore perfectly holds every sauce thanks to its unique shape, while the bronze die creates an exceptional texture that elevates every bite. An easy yet impressive recipe you can prepare at home and share with family and friends.

What we need:

  • 250gr strigolore
  • 4 slices burger cheese (melting cheese)
  • 2 chicken breasts, cut into bite-sized pieces
  • Salt & black pepper
  • 50 gr. flour
  • 2 eggs, beaten
  • 80 g panko breadcrumbs
  • Oil for frying

For the Big Mac-style sauce:

  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tbsp finely chopped pickles or relish
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp vinegar (or pickle juice)
  • Pinch of paprika

Mix all sauce ingredients until smooth and creamy.
Adjust to taste (more pickle = more authentic fast-food vibe).

For the topping:

  • 1 handful cherry tomatoes, halved
  • 1 handful lettuce, chopped
  • Pickled red onions (see quick method below)

Quick pickled onions.

  • Slice 1 red onion into thin strips and mix with
  • 2 tbsp vinegar
  • 1 tsp sugar
  • Pinch of salt

The vinegar will dissolve the sugar and salt.

Let it marinate for 10–15 minutes. The longer it sits, the more flavourful it becomes.

How to cook:

1. Cook the Mama Irene Strigolore in salted water according to package instructions.
Drain well and transfer to an oven-proof dish.

2. Place burger cheese slices evenly over the hot pasta.
Bake at 180°C for 5–7 minutes, until fully melted and slightly gooey.

3. Season the chicken with salt and pepper. Coat in: flour, egg, panko.
Fry in hot oil until golden and crispy (about 4–5 minutes).
Remove and drain on paper towels.

Take the cheesy pasta out of the oven and top with the, crispy panko chicken, cherry tomatoes, lettuce, pickled red onions and finish with a generous drizzle of the Big Mac-style sauce!!!

Andddd now it’s time to totally melt over it together!
