Caponata with fresh vegetable fusilli

Experience the real taste of mediterranean caponata with the most delicious vegetable fusilli you’re ever tasted.

A delicious and rich meal, combining tender eggplant with a variety of vegetables and the unique taste of capers and olives. It is ideal for vegetarians and has several variations.

Most of them are seasoned with vinegar. Some require raisins or a little sugar.

We serve it with our delicious, perfectly cooked, colourful mama irene pasta vegetable fusilli!

What we need:

  • 1 pack. Fresh vegetable fusilli mamairenepasta
  • 2 eggplants, cut into small cubes
  • 1 onion, finely sliced
  • 2 garlic cloves, finely chopped
  • 250 gr. cherry tomatoes
  • 1 tbsp tomato paste
  • 150gr green olives
  • 4 tbsp capers
  • 10 basil leaves, finely chopped
  • olive oil
  • salt and pepper

For the topping:

  • 20gr. roasted pine nuts
  • Basil
  • olive oil
  • salt and freshly ground pepper

How to cook:

  1. In a deep pan with olive oil, sauté the eggplants for about 10 minutes until they turn golden and soften.
  2. Add the onion, garlic, tomato paste and sauté for a few more minutes until the onion is shiny.
  3. Add the cherry tomatoes cut in half, the olives, capers, a little salt and pepper and lower the heat. Cover and cook for about 10 minutes.
  4. At the end, add the basil, stir and remove from the heat.
  5. While the caponata simmers, bring a large pot of salted water to a boil. Add the fusilli pasta and cook for 3′ until al dente.
  6. Drain and toss the cooked pasta with the caponata. Serve with roasted pine nuts, olive oil, fresh pepper and a few fresh basil leaves for a burst of color and added freshness.

How to combine it:

Pairs wonderfully with a crisp green salad and a glass of your favorite wine.
